    i poach eggs sous vide bathwater style when i want something to top a stir fry or curry

    when out, i have them scrambled or on rare occasions sunny side up

    not lazy: poached

    burrito: scrambled


    not keen on fried or omelet eggs, texture always seems overcooked and rubbery

    I feel really fucking strongly about this. I like eggs every way, scrambled, sunny side up, over easy, poached. But regardless of methodology, for any of the fried methods, I cannot fucking stand brown/crispy edges on eggs.

    People are asking what "browned" means.

    For me I think he's talking about crispy edges/bottom on the eggs, which to me translates as BURNT and I'll fight u if u think otherwise

    It's gotten to the point that before I pick a place to eat at that I'm not familiar with, I'll check out their yelp/google photos to see if they burn their fucking eggs so I can avoid that place or ordering egg dishes.

    I guess it's pretty rare to find a place that burns scrambled eggs, but for regular sunnyside-up eggs I find it incredibly common to see crispy egg whites, even at some high-end joints, and I just can't understand it.

    I think this ties in to my bit about burnt eggs. To me eggs are almost always cooked on overly high heat. Slower cooking on lower heat (which obv. is more work/time for the restaurant or cook) results in better eggs imo. I love omlettes but only from a specific subset of restaurants which manage to do this right.

    Depends on my mood, I like them all.

    I even add raw eggs into soups like chicken noodle, top ramen, cup of noodles, etc similar to egg drop soup.


    For example:


    The whole mayonnaise and raw egg in instant ramen isn't actually Japanese. Technically it's prison food; inmates have been doing that for over 40 or 50 years. I wouldn't add bean sprouts though, just mayo, raw egg, chopped green onions, mince garlic and you're good to go. You could also add Jack Links beef jerky for the complete prison cuisine.

    I cannot understand the degree of hatred people have for crispy outlines around a fried egg. I understand having a preference but the strength of the preference is puzzling to me in this case

    As long as the yolk is still liquid and no part is undercooked idgaf, really

    “Browned” if I had to guess means scrambled but allowed to sit too long in one spot so the outside gets lightly browned. I can agree that’s probably the worst thing you can do to an egg

    The best way to scramble an egg is to beat it in a bowl and continually fold it into the center of the pan so it’s always moving but it’s not getting pulverized like when people just keep scrambling it while it’s cooking

    I usually eat eggs fried over easy, though

    Maybe a texture thing for some people. I think my brother and I as kids realized that eggs (one of our very favorite foods) were either glorious or ruined (by burnt edges) and we told our dad that the crispy edges were gnarly so he made sure to not burn the eggs from then on, and I just got really used to them w/out any browning (as is the way w/french cooking).

    It's hard to think of anything else that feels so ruined by such a small difference. Like you can sortof overdo a steak, or over-crisp bacon, but it's really subtle. But for eggs it feels much more binary... either they are soft as eggs should be, or crispy which feels like a whole different thing.

    I guess a similar thing would be rice. To me rice = soft. Not mushy, but you know... soft rice texture. If any of it dries out or is fried to the point of turning hard, it's ruined. (The main culinary exception to this I can think of is Iranian Tadigh which is crispy by design and everyone fucking raves over that shit, but I'm not a big fan of that either. Big surprise)

    Where there is some sizable brown area around the outside but the bulk of the egg in the center is fine
